Question

Food Chemistry Test III 1) You work for "Amanda and Austin's" Fitness Trainers as a Product Development Specialist. They would like you to make a beverage for their new line of gyms that will enhance muscle growth and overall fitness. They want to add a whey protein to their beverage, but they heat treat the beverage at 75 C (170 F) for 1 min. Is this possible? How could you incorporate other proteins into your beverage other than whey? What protein would you used if you needed to apply a heat treatment? Why? What about at a pH of 4.5 and heat treated? Why?

Explanation / Answer

Heat can be used to disrupt hydrogen bonds and non-polar hydrophobic interactions. This occurs because heat increases the kinetic energy and causes the molecules to vibrate so rapidly and violently that the bonds are disrupted. The proteins in eggs denature and coagulate during cooking. The highest denaturation temperature for whey protein concentrate prepared by ultrafiltration was 88°C at pH 3.5 Therefore, it is possible to use whey protein in the beverage.
