Lactose and maltose are reducing sugar. Lactose is found in the milk . Lactase (also known as lactase-phlorizin hydrolase or LPH) is a part of -galactosidase family of enzymes.Enzyme called lactase to break down the sugar because of this we can absorb it into our bodies. infant have highest lactase activity but the activity reduse by the introduction of weaning .It consist of galactose joined to glucose by a -1,4-glycosidic linkage. Lactase is located in the brush border of the small intestine of humans .Lactose is hydrolyzed to these monosaccharides by lactase / LPH in human beings. Disaccharides are dissolved in water, but its too big to pass through the cell membrane by diffusion.So it broken down in the small intestine during digestion to give the smaller monosaccharides that pass into the blood and through cell membranes into cells. lactase consists of a single 160-kDa polypeptide chain that located at brush border membrane of intestinal epithelial cells. its position at N-terminus outside the cell and the C-terminus in the cytosol. LPH have2 catalytic glutamic acid sites. the lactase activity has been connected to Glu-1749, while Glu-1273 is the site of phlorizin hydrolase function.
