In this case, V1 RMS = 2.061 and V2 RMS = 1.146. How did they get 52.4 degrees? I've submitted the part where I am confused.

Let's assume that x is the angle between the V1 and V2. Since magnitude of V2 is greater than magnitude of V1, so we can write - V2 * Cos(x) = V1 => x = Cos-1(1.146/2.061) = 56.220 . The angle between V1 and V2 phasor is 56.220 only and not the 52.40 .
