I assume that you are making an experiment to verify a certain physic model. However, as you are not saying anything else I will have to assume that you want to adjust the data to a line. The slope you are looking for would be the slope of the line. I don't know what you mean by the 'deltas', as this values depend on what points in the line you choose.

Once you make the graphic and you find the best line, the equation is: Y = -1,4639*X + 3,6611 so the slope is -1,4639. Also, the line has an R2 of 0,9789 so it is a very good sample the one you have here.

With that equation you can find every difference between points in the line.
