Sam has a small business for making donuts. Sam's Donuts has a pre-defined set of steps to meet customer demand. First, orders are taken via a free app, a text message, or an email message. When the order is received, the dough is mixed by Sam in a bowl with the proper ingredients for the item on the order. This effort takes 8 minutes. A helper then places the dough in a form that holds 6 donuts and this effort takes 2 minutes to fill one form. The form then loaded into the oven and left there for 12 minutes to achieve the proper product consistency. After the oven cooking, the donuts are allowed to cool for 3 minutes before being packaged. The helper then takes 1 minute to package the donuts and process the payment. a). Draw a flowchart of the process. (it does not have to be real fancy) b). Calculate the theoretical flowtime for the process from the time an order is received until the payment is processed c). Determine the unit load on the three resources: Sam, helper, and oven. Assume all three resources are available for 8 hours, or 480 minutes. d). Determine the capacity of the cookie making process as well as the capacity of the three resources e). Suppose an order is received for 1 dozen donuts. The mixing bowl can handle enough dough for one dozen donuts, but the oven can only hold one form (6 donuts) at a time. Calculate the theoretical flowtime f). Refer to the situation in part c where an order is received for 1 dozen donuts. For each of the following system changes, calculate the theoretical flowtime, process capacity, and the flow rate Analyze these system changes independent of each other 1. Replace the current oven with a larger one that will hold 2 forms (1 dozen donuts) 2. Buy another small oven that holds 6 donuts 3. Replace the current oven with a convection oven that will bake one form (6 donuts) in half the time (6 minutes instead of 12) g). If the current oven is replaced with a convection oven that will bake one form (6 donuts) in half the time (6 minutes instead of 12), what is the theoretical capacity of the system process? 8 minutes 2 minutes 12 minutes 3 minutes 1 minutes place dough in form (6 form in oven ou cooling packing order mIx b) Theoretical flow time A+B+C+D+E+F 0 8+2+12+3+1 - 26 minutes unit load on sam total time available /total time taken by sam - 480/8 60 units unit load on helper-total time available/ total time taken by helper - 480/ (2+1) 160 units unit load on helper-total time available/ total time taken by helper 480 / 12 40 units d) Capacity of cooky making pocess total time available/ total cycle time 480 26 18.46154 18.46*6 110.7 110 donutsExplanation / Answer
Small correction in part c)- The third calculation will be unit load on oven instead of unit load on helper.
d) (2) capacity of Sam = (480/8)*6 = 360 donuts
Capacity of helper = (480/3)*6= 960 donuts
Capacity of oven= (480/12)*6 = 240 donuts
e) Since the order is for 1 dozen donuts, the packing activity can not be done once all the donuts are ready. Hence here is only one path for which theoretical flowtime = A+B+C+D'+E+F
where D' is the new time needed in oven= 12+12= 24 min
therefore theoretical flowtime= 0+8+2+24+3+1= 38 min
f) (1)Replace the current oven with a larger one: Since the capacity has increased, we can keep all the donuts in the oven at once and the baking time remains the same i.e. 12 min, therefore the theoretical time will be same as in section b i.e. 26 min and process capacity will be same as in d above i.e. 110 donuts. The flow rate is defined as the number of flow units (donuts in our case) going through the business per unit time.
So flow rate = 12/26= 0.46 donuts/min
(2) Buy another oven: Since we have 2 ovens noe, we can keep 6 in one and 6 in another and hence baking time remains same i.e. 12 min therefore the theoretical time will be same as in section b i.e. 26 min and process capacity will be same as in d above i.e. 110 donuts. The flow rate will be same as in (1) above i.e. 0.46 donuts/min
(3)Replace the current one with a convection oven: In this case we can bake 6 donuts in 6 min and another 6 donuts in 6 min so the total time again remains the same i.e. 12 min therefore the theoretical time will be same as in section b i.e. 26 min and process capacity will be same as in d above i.e. 110 donuts. The flow rate will be same as in (1) above i.e. 0.46 donuts/min
g) The theoretical flow in this case = A+B+C+D"+E+F = 0+8+2+6+3+1= 20
Where D" is 6 minutes since we are using convection oven
Theoretical capacity = (480/20)*6= 144 donuts
