At high concentration of sugar the cell is switched to fermentative mode, and the pyruvate is metabolised to ethanol.
During Fermentative Mode the final electron acceptor is acetaldehyde.
Acetaldehyde + NADH + H+ ----------> ethanol + NAD+
So, when an external electron acceptor NO3- is added nitrate acts as an electron receptor. Under these respiratory conditions the energy yield is greater than fermentative conditions.
When the culture is aerated, the concentration of O2 is increased and O2 act as electron acceptor and the fermentation process is further accelerated.
