C is the most likely metabolic pathway.

In the WT strain -

First, espresso and capuccino are produced in equal amounts. Then, 20mins after start of reaction latte and americano are produced from espresso and capuccino (everything is being produced in equal amounts). 30mins after start of reaction, huge surge in latte production is seen (better explained by C than D. If D was correct we would see surge in americano production. A and B do not explain the surge) crappachino is also produced from the latte.

Enzymes most likely to be mutated in M Starbucksocytes are:

the one that converts milk to espresso as in the M strain large amount of espresso can be seen at 20min.

enzyme that converts espresso to latte has probably also mutated as espresso is being retained in large quantity and concentration of latte is low at 30mins.
