A question about microbiology. 30. (6 points): Your Beer company decided to make whisky products which can be more profitable in the market. Both beer and whisky are produced with the same starting material, malted barley, and yeast fermentation. Therefore, whisky production can be achieved with minimal changes in existing beer-making steps and facilities. Which step in beer making should be modified to make whisky (refer to your lecture note)? What woul be the effect of the modification on fermentation? Beer is produced by the brewing process, while whiskey is produced by distillation process; although fermentation is the common step used in both the processes. Both beverages are produced with same starting material, barley; which is malted and mashed and then fermented with yeast to produce alcohol which is flavoured and mixed with other nutrients to make beverages. Whiskey is less diluted as compared to beer, which is achieved by distillation process.
High quality distiller product is made by modifications at each level, malting, fermenting and dilution. Malt extract is fermented without gelatinization of starch. Fine and coarse malt extracts are germinated at low temperature for long duration. Final fermenting substrate is glucose not the maltose, and the unhoped malt is used. Mild contamination with Lactobacillus and Acetobacter species is retained during fermentation. This gives high fermentability with retaining desirable esters and congeners. Long duration distillation and storage is done for better quality.
