Molecules which inhibit the oxidation of biomolecules in living organisms and in stored food are called antioxidants. They occur as a natural substance in many foods and they can also be synthesized by artificial means.
Oxidation reactions are deleterious to living organisms. These reactions release free radicals and cause damage to proteins, DNA, and lipids. As a result, the person may get cancer, Alzheimer's disease, arthritis, cataract and early aging. Antioxidants block the release of free radicals and associated chain reactions, which in turn protect the organisms from cellular damage.
