5. SubMay sandwich shop provides healthy sandwiches for cu sandwich assembly lines. Firstly, a customer places aur order with a worker which takes 30 seconds. The order is then sent to one of the two assembly lines: Each assembly line has 2 workers and three processes : (1) assembly worker I retrieves and cuts the bread (15 seconds per sandwich), (2) assembly worker 2 adds ingredients and places the sandwich onto the toaster conveyor belt (20 seconds per sandwich), and (3) the toaster heats the sandwich (40 seconds per sandwich). Finally, another worker wraps the heated sandwiches coming out of both the toasters and delivers it to the customer (37.5 seconds per sandwich). a. Draw and label a flowchart of the entire operation and processes. (4) b. Perform a "bottleneck analysis" and identify the bottleneck in the entire customers. It has two identical with a worker which takes 30 operation. (2) What is the hourly output capacity of the sandwich shop? (2) c. Page 2 of 6

Explanation / Answer

Answer to question a :

Flowchart for the entire operation and process is as follows :

Customer places an order with a worker and worker sending order information to assembly lines                         ( 30 secs)

Assembly line 1

Assembly line 2

Retrieval and cutting the bread by worker 1 ( 15 secs)

Retrieval and cutting the bread by worker 1 ( 15 secs)

Adding ingredient and placement of sandwich on toaster conveyor by worker 2 ( 20 secs )

Adding ingredient and placement of sandwich on toaster conveyor by worker 2 ( 20 secs )

Heating of sandwich at the toaster conveyor ( 40 secs)

Heating of sandwich at toaster conveyor ( 40 secs)

Wrapping up of heated sandwich by one worker coming out of both the assembly lines and delivering same to customers ( 37.5 secs)

Answer to question b:

If two assembly lines together are taken as a subsystem, The effective capacity of the subsystem for each step of activity will be as per following :

Retrieval and cutting the bread by worker 1 = 15/2 = 7.5 seconds

Adding ingredient and placement of sandwich on toaster conveyor by worker 2 = 20/2 = 10 seconds

Heating of sandwich at toaster conveyor = 40 /2 = 20 seconds

We now therefore have a simplified system which consists of :

Step 1 = 7.5 seconds

Step 2 = 10 seconds

Step 3 = 20 seconds

Answer to question c :

The cycle time of the whole operation will be determined by the capacity of the bottleneck activity. Therefore , cycle time of the whole operation will be 37.5 seconds

Therefore hourly output capacity of the Sandwich shop

= 3600 seconds / Cycle time of the whole operation

= 3600 / 37.5

= 96 sandwiches

HOURLY CAPACITY OF THE SANDWICH SHOP = 96 SANDWICHES
