Question
Combustion! In this problem, you will test the idea that most of the calories in food product come from fats, carbohydrates, and protein. Find out how many grams of fats/carbohydrates/protein are in the following food products (see the "nutritional information" panel on the product container or look up the info online) per gram. Then use the following approximate enthalpies of combustion for "fat", "carbohydrate", and "protein" (-39 kJ/g, -16.5 kJ/g, and -23 kJ/g, respectively) to estimate what the caloric content would be for each food product. Compare the value you calculate for calories with the value provided by the manufacturer. Recall that nutritional calories, or kcal, are 1000 scientific calories, and that there are 4.18 Joules in one scientific calorie. Haagen-Dazs vanilla ice cream A 12 ounce serving of Thomas Kemper's root beer Something "healthy" that you like to eat Something "unhealthy" that you like to eat How well do the estimates agree for these foods?Explanation / Answer
(a) Haagen-Dazs vanilla ice cream:
Take 100 gm of ice cream.Following contants are there in this ice cream.
Fat= 7 gram
Carbohydrate= 16 gram
Protein = 2.3 gram
So , In Calori amount = gm*enthalpy
So fat content = 7gm*39 kj/gm =273 kJ
Carbohydrate = 16*16.5=264 kJ
Protein = 2.3*23 =52.9 kJ
So total energy =273+264+52.9=589.9 kJ =589900 J
Now we know that 1000 cal = 4.184 J
So caloric content=589900/4184=140.98 cal
(b) A 12 ounce serving of Thomas Kemper's root beer
beer contain
Fat= 0 gm
Carbohydrates= 41 gram
Protein= 0 gram
So carbohydrates= 41*16.5=676.5 kJ=676500 J
So caloric content = 676500/4184=161.68 cal
