White light consist of seven different lights which have different energy. If you irradiate a molecule with white light, it can absorb all of these seven lights and all the different changes will occur together. In spectroscopic measurement we observe a perticular change. For example, either in romational energy level, or in electronic energy level etc. But if all the changes occur together, it will be difficult to monitor. So, you have to use a perticular wavelength rage for which you want to see the change.
