Nixtamalized corn is the corn treated with alkaline solution usually lime water and then hulled. It is done to remove alfatoxins from the mycotoxin contaminated corn.It also improved the niacin content in maize.

The over consumption of unprocessed corn caused niacin defieciency. Beans are a direct compliment to corn so they can be combined together.
